Perfect Caesar Salad

I'll let you in on a little secret... this Caesar salad is THE perfect Caesar salad. Simple, garlicky, lemony, creamy. I looove garlic so I quadruple the required amount. Sinful with a thick steak or with spaghetti and garlic bread.



Dressing

1 garlic clove
1 egg
1 tsp. Worcestershire sauce
2 tbsp. lemon juice
1/8 tsp. pepper
1 cup salad oil

Put first 5 ingredients in blender. Blend until smooth, slowly adding oil. Chill about 2 hours.

Salad

1 large head romaine lettuce
2 cups croutons
8 slices bacon, cooked and crumbled
1/2 cup parmesan cheese

Tear lettuce in bite size pieces in salad bowl. Add croutons. Add dressing to taste (you may not need all the dressing, this recipe yields a lot). Toss to coat. Sprinkle with bacon and cheese.

  1. Yum! A simple Caesar salad is so comforting sometimes. The garlickier, the better for me.
